Quick Low Carb Pancakes (cottage cheese)

Introduction

These pancakes always get me out a hurry and work with whatever toppings I'm craving!! :) These pancakes always get me out a hurry and work with whatever toppings I'm craving!! :)
Number of Servings: 4

Ingredients

    * 2 eggs
    * 1 1/2 Tbsp. flaxseed meal
    * 1/4 cup cottage cheese
    * 3/4 Tbsp. natural peanut butter (optional)
    * 1/4 tsp baking soda
    * Pinch of salt (optional)

Directions

Beat eggs until well blended. Mix in rest of ingredients until you reach an even mixture.
On a griddle or pan, use non-stick cooking spray and pour batter onto pan. Usually med-high temperatures work best.

Enjoy your yummy pancakes with yogurt, cheese, nut butters, cream cheese, seeds, etc. Your options are limitless!!! :)
