Introduction

Strawberries are in season and they're packed with vitamin C as well as other antioxidants. Better still, they're low in calories. Try them in a whole new way in this smooth and creamy tasting soup.

Number of Servings: 4

Ingredients

    2 cups fresh strawberries, stems removed
    1 cup low-fat buttermilk
    1 tablespoon honey
    1/2 cup vanilla nonfat yogurt
    4 mint sprigs for garnish

Directions

Combine strawberries, buttermilk and honey in blender or food processor; puree until smooth. Pour into individual serving bowls and chill two hours; top with a dollop of yogurt and one mint sprig.
