Chef Meg's Grilled Garlic Citrus Flank Steak



Introduction

Ingredients

    Marinade:
    10 cloves garlic, minced
    1 t salt
    1/2 t black pepper, cracked
    1 t oregano
    1 C orange juice
    1 lime, juiced
    1/4 C Olive Oil
    24 oz Flank Steak, trimmed of visuable fat


Directions

Prepare marinade by combining all ingredients into a mixing bowl; stir. Place steak in a plastic bag or glass dish and coat in marinade. Marinate in the refrigerator for at least 30 minutes or up to 4 hours. Preheat grill to moderate heat. Remove steak from marinade; discarding any left in the bag or in dish. Grill turning once until desired temperature. Since this is a large cut of meat, I would suggest cooking to medium rare ( 135 degrees) and allowing the meat to rest for 5 minutes once taken off the grill. The temperature of the steak will rise due to carry over cooking and bring the steak up to a medium degree of doneness. (140 degrees)

Nutritionals note that one half of the marinade will be discarded. Serve 3 ounces of steak .
