Ingredients

    2 yellow squash, chopped
    1 bell pepper, chopped
    1/2 red onion, chopped
    8 stalks asparagus, cut in 3 inch pieces
    6 baby portobello mushrooms, quartered
    1 t EVOO
    Morton's Nature's Seasoning

Directions

Chop all the veggies, drizzle with EVOO and add generous amount of seasoning.

Roast at 450 degrees until all veggies are tender.

You can drizzle with lemon juice or balsamic vinegar, if desired. Great served as a side dish, or stirred into whole-wheat pasta, brown rice or wild rice.
