Acorn Squash Soup

Introduction

Number of Servings: 4

Ingredients

    1 small onion
    1/4 cup raw celery
    1 tbsp olive oil
    1 tsp chicken bouillon granules
    1/2 tsp dried dill weed
    1/4 tsp curry powder
    dash cayenne pepper
    2 cups chicken broth
    1 (12 ounce) can evaporated milk, nonfat
    3 cups mashed, cooked acorn squash

    *optional* 5 bacon strips, or turkey bacon, cooked and crumbled. This has NOT been calculated into the nutritional info.

Directions

In a large saucepan, saute the onion and celery in oil. Stir in bouillon, dill, curry and cayenne until blended. Gradually add broth and milk. Bring to a boil; cook and stir for 2 minutes. Add the squash, salt and pepper; heat through.

In a blender, process the soup in batches until smooth. Pour into bowls; garnish with bacon.
