Introduction

This is great to make ahead and freeze as individuals for quick dinners. You can freeze the leftovers (if there are any) for quick lunches.

You can substitute ground turkey for the beef, and ricotta for the cottage cheese. I like the sweetness that cottage cheese adds.

Number of Servings: 8

Ingredients

    8 lasagna noodles, cooked and drained
    Pam cooking spray

    Sauce

    8 oz lean ground beef
    1/4 cup chopped onion
    1/4 chopped green bell pepper
    2 cloves garlic, minced
    1 14.5 oz can diced tomatoes
    1 15 oz can tomato sauce
    1 tsp sugar

    Filling

    1 16oz 1% cottage cheese
    1 egg, beaten
    1/4 cup grated parmesan cheese
    1 tbsp italian seasoning

Directions

Cook the lasagna noodles as directed on box. Drain and set aside.

Preheat oven to 350 degrees.

For the sauce. In a medium sauce pan cook the ground beef until no longer pink. Drain and return to pan. Add the olive oil, onion, bell pepper and garlic. Cook until the onions are tender, but not mushy. Add the canned tomatoes and the tomato sauce along with the sugar. Leave on low heat to simmer.

For the filling. Put the cottage cheese, egg, parmesan, basil and parsley in a bowl and mix well.

Spray baking dish with non stick spray.

Spread 1/4 cup filling onto the lasagna noodles and roll up. Place the rolled up lasagna noodles into a baking dish (I use an 8x8 dish). Cover with the sauce and bake for 30 minutes.

Can be topped with additional parmesan or mozzarella cheese per taste.

Each rolled lasagna noodles is 1 serving with 1/4 cup of sauce.

  • Very good. Altered slightly. Added marjoram, basil and oregano to taste. Doubled garlic. Instead of sugar, I used Splenda. The extra I had, I placed into freezer in individual servings to use for lunches. - 8/16/12
