Introduction

boneless skinless breast with Smart bran pecan coating over Honey mustard vinaigrette spray. Very succulent and tender with crispy top and nice flavor. You can vary the cereal, nuts and salad dressing spray to taste. Number of Servings: 6

Ingredients

    6 boneless skinless chicken breasts
    2/3 cup Nature's path Smart Bran cereal with psyllium & Oatbran or your favorite cereal
    1 oz pecan halves(about 20 halves) or nut of choice
    30 sprays ken's Lite access Honey Mustard vinaigrette or salad spray of choice
    6 spray of extra virgin olive oil cooking spray
    pepper and salt to taste. I used only pepper to keep sodium low

Directions

In food processor, puree the cereal and pecan halves and place on a plater.
heat oven to 400
Remove any remaining fat or skin on breasts,and pound to flatten
spray each breast side with 5 sprays of Honey mustard vinaigrette, then dip each side in pecan cereal batter Spray bottom & top of each breast with 1/3 seconds olive oil spray and bake on boiler tray for 18-20 minutes until juices turn clear.
Makes 6 1/2 breast servings at 185 calories each
