Introduction

Ingredients

    Chicken Breast, no skin, 2 unit
    (yield from 1 lb ready-to-cook)
    Soy Sauce - Several shakes.
    Bread crumbs, dry, grated, plain, 0.25 cup
    *Extra Light Olive Oil, 2 tbsp
    Lemon juice, 0.5 fl oz
    Oregano, ground, .33 tbsp
    Salt, 1 tsp
    Pepper, black, 1 tsp

Directions

Pre-heat baking oven to 400 degrees.
Slice two raw boneless chicken breasts into strips or chunks.
Combine soy sauce, bread crumbs, olive oil, lemon juice, oregano and any other spices you wish in a shallow dish, and mix ingredients with a spoon to blend.
Put chicken pieces into mixture for 5 minutes or more.
Place chicken pieces in a baking dish. I use a rectangular metal pan with a rack that fits into it, with tin foil under it for easier pan cleaning.
Reduce oven temperature to 300 degrees.
Bake for 20 minutes, then check how it's doing.
Bake 10-15 more minutes until done and browned to your liking.
