Lucky Blini

Submitted by: REDZET

Introduction

My son (net name Lucky) had a project due on Russian and he wanted to cook something. This recipe is called Russian Blini, found on the web everywhere, and it is just like blintzes, I guess. I read that in Russia people fill these with cheese, cottage cheese, sour cream or other milk products. Also, honey is really good over the top! Ingredients

    eggs, flour, sugar, salt, milk

Directions

Makes about 16 blini, we eat 2 as a serving, but I've done the nutrient info on 1.

Mix egg, sugar and salt first,
Add flour and milk and whisk until mixed,
Batter is really runny, and the first time you make them you think "How will this cook?" It will, I promise.

Make like pancakes!

Careful flipping, because it will become all wrinkly, and that is hard to fill...

Lay on a plate, put a spoonful of whatever you like, fold, and top!
