Banana Custard Pie

Ingredients

1 baked pie crust (I used a chocolate press-in crust out of the CLEAN EATS RECIPES TEAM cookbook)
3 medium ripe bananas
2 tbsp cornstarrch
2 cups skim or soy milk
50 drops od SweetLeaf Stevia Clear
1 tsp vanilla extract
3 large egg yolks, beaten
Directions
Slice bananas into baked pie crust. Set aside. Place cornstarch in a med sized saucepan and add a little milk. Whisk until cornstarch is completely dissolved. Add remaining milk. Place saucepan over medium heat. Heat, whisking frequently, until mixture becomes visibly hot. Add Stevia, and vanilla, then drizzle in beaten yolks; keep whisking. Cook until thick; about 5-8 minutes. Pour the hot custard over the banana slices in the crust, and let cool to room temperature. Let sit for at least two hours. Custard will thicken further as it cools.
