Pasta in a low fat creamy sauce

Introduction

Its amazing how good this tastes full of flavors from the peppers and so pretty, making your plate colorful and healthy! Just like the wholesome creamy alfredo!! Yum. Just add whatever veggies you like or whatever you have in your fridge as I did! Ingredients

    Gia Russa Whole Wheat spaghetti dry, 4 oz
    Cauliflower, raw, 1.5 cup - cut into florets.
    Spinach, frozen, 3 oz Use more if you like. (if you have fresh its better)
    Baby Carrrots, raw, 3 large, sliced
    Green Peppers (bell peppers), .2 cup, strips
    Yellow Peppers (bell peppers), 10 strips
    Goya organic chick peas, 0.75 cup
    Pepper, black, 3 dash
    Sour cream, fat free, 170 grams
    *Bertolli Alfredo Sauce, 0.3 cup ( 6 tbsp)
    Eggplant, fresh, 227 grams 1 small cut into 1/2" cubes or chunks.
    *Peppers, sweet, red, fresh, 3 ring (3" dia, 1/4" thick)

    Garnish:
    Parsley

Directions

Boil water in a pot with ( salt if you like) a drop of Olive oil. Add eggplant chunks, carrots and spaghetti until both are almost tender. add the cauliflower and spinach ( only if using frozen). Drain the water.

As the spaghetti is boiling, in a sauce pan, heat 1 tsp. of olive oil and drop all the peppers and stir fry for a minute or two, until fragrant on medium heat. Take the pan off the heat, stir in the alfredo sauce and sour cream, stir well until there are no clumps and sprinkle as much black pepper as you like and if any salt and the canned garbanzo beans - chick peas ( keeping in mind chick peas have sodium too - we don't use much sodium at all). Pour over the pasta and mix well. Garnish with a couple of parsley leaves.

Serve immediately.
