Crock Lentil Soup

Introduction

Number of Servings: 6

Ingredients

    1 onion, chopped
    2 Tbsp olive oil
    4 carrots, sliced
    4 stalks celery, chopped
    3 cloves garlic, minced
    1 teaspoon dried oregano
    1 bay leaf
    1 teaspoon dried basil
    2 (14.5 ounce) cans crushed or diced tomatoes with juice
    2 cups dry lentils, rinsed
    7 cups chicken, vegetable or beef broth
    2 cups raw baby spinach, whole or thinly sliced
    2 tablespoons balsamic vinegar (or balsamic dressing)
    pepper to taste

Directions

1) In a large frying pan, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, pepper and basil; cook for 2 minutes. Transfer to Crock Pot.

2) Add lentils, broth, and diced or crushed tomatoes with juice. Cover and cook on low for 8 hours. When ready to serve, stir in spinach, and cook until it wilts. Stir in vinegar and add more vinegar if desired.
