Ingredients



    Beans, black, 1 cup (remove)
    Yellow Sweet Corn, Canned, 1 cup (remove)
    *Tomatoes, red, ripe, canned, with green chilies, 1 cup (remove)
    Onions, raw, 1 cup, chopped (remove)
    Green Peppers (bell peppers), 0.5 cup, chopped (remove)
    *Brown Rice, long grain, 1 cup (remove)

Directions

Mix all ingredients together in an iron skillet until cooked through.

  • I also made a couple of adjustments, adding some shredded cheddar cheese and substituting broken up tortilla chips for the rice. I'm thinking you could also substitute your favorite salsa for the tomatoes. This was delicious! - 6/3/10
