Fish Tacos

Tasty, healthy fish tacos. The fat is high, but it's healthy fat from avocados. :-) You can omit the olive oil if you have non stick pans. Prep time goes fast if you use your food processor to make the salsa! Tasty, healthy fish tacos. Ingredients

1/4 c shredded cheddar cheese
2.5 ripe tomatoes - 2 roasted
2 three ounce tilapia fillets. (or another white fish.)
1/4 c chopped onion
juice of half a lemon
juice of half a lime
2 cloves garlic, roasted
2 jalapeno - roasted
1 medium avadado
4 small mission flour tortillas
dash of cumin
dash of garlic powder
salt and pepper to taste
sprinkle of chili powder
2 Tbsp. extra virgin olive oil
Directions
First, roast your tomatoes, jalapenos, onion, and garlic. Place all in food processor with lime juice, salt and pepper, and a dash of cumin. Salsa!!
Second, mash avacado, and combine with half a tomato, half a jalapeno, garlic powder, salt, pepper, and lemon juice. Guacamole!!
Third, heat olive oil in pan and prepare fish by sprinkling with salt, pepper, and a dash of chili powder. Heat in pan over medium heat until fish flakes - about 3 minutes each side. When cooked through, use your spatula to roughly chop into pieces.
Fourth, heat tortillas over flame if you have a gas stove, or in microwave for 10 seconds.
Serve 1 fish filet, and 2 Tbsp. cheese per tortilla. Eat up to a cup of salsa and half the guacamole to meet the nutritional stats per serving.
