Ingredients

24 large uncooked shrimp (peeled, deveined and leave tails intact)
    1/3 cup cornstarch
    1 teaspoon salt
1/2 teaspoon ground red pepper (can use more)
    3 large egg whites
1 1/2 cups sweetened flaked coconut

Directions

Preheat oven to 375 degrees F.
Rinse shrimp under cold water and pat dry with paper towels.
In a shallow dish combine cornstarch with salt and red pepper; stir to combine.
Place egg whites in a medium bowl; beat using an electric mixer on high speed until frothy (about 2 minutes).
Place the coconut in a shallow dish.
Working one shrimp at a time dredge the shrimp first in the cornstarch mixture, then dip in egg whites and then in shredded coconut.
Place the shrimp on a foil lined baking sheet that has been generously coated with cooking spray.
Repeat with remaining shrimp (cornstarch, then egg white, and then in coconut).
Lightly spray the shrimp with cooking spray.
Bake 10 minutes. Turn shrimp and bake another 10 minutes or until shrimp are done.

Made this last night-it was delicious. I ended up buying unsweetened coconut--so I just added a little honey to the egg whites. I blended together some fat free plain yogurt, 2tsp honey, fresh mango and fresh ginger to make a quick dipping sauce. This is definitely going in to my dinner rotation! - 3/16/11

Cannot believe this recipe is healthy. This is better than fried coconut shrimp. Add some marmalade sauce and voila! - 9/1/09

  • We love these in our house. I use cayenne pepper instead of the ground red pepper. It makes them a little spicier. - 9/15/13

  • This looks fantastic but remember coconut has fat - natural and probably one of the healtier fats but still fat (coconut oil anyone?) also we usually neglect the calories in sprays but when you spray generously with cooking oil - more fat. No wonder it's so good :) - 4/17/13

  • Very good. I used cooked shrimp (don't know much about seafood), and it was still good & easier to make. I did omit the salt & added more red pepper flakes. Used as the main course for dinner along with a half sweet potato and parsnips. I think you could do these for anything. Thank you. - 3/5/12

  • Oh. My. Gosh. These were amazing. The texture was awesome. Light, not greasy like when they are fried. It was a real weekend treat! They were a little bit of work, but WELL worth it. Served it with an orange marmalade and light horseradish mayo mixture to dip. Paired with an Asian Salad. Perfect! - 3/3/12

  • AWESOME recipe! My family couldn't believe it was healthy either! Thank you so much from my coconut loving family!
I also purchased shrimp with 'no tail shells'. Made the recipe easier to just fork and eat! It took some time to make but that's because I made over 40. It's messy to make, but GOOD! - 11/23/11

  • This was an great recipie! My hubby loves seafood n I don't, although I am learning. This is one of the few seafood that I like and now I can make it healthy! Only neg comment is that for us, we had tons of coconut and cornstarch mixture leftover, which made the nutritional info grossly wrong. - 11/15/10

  • I made this last night. It is the first recipe I have tried from Spark people and we loved it. My husband couldn't believe it was not supper fattening!! However, I did have to call a friend about "dredging". I thinkof that as a way to open up the entrance to a marina!! :) - 7/13/10
