3 cups softened red beans
6 cups water
4 cloves garlic, minced or mashed
2 TBSP olive oil
3/4 cup tomato paste
2 TBSP vinegar
1 medium onion
2 inch square of banana pepper, raw
4 leaves cilantro ancho
1 chicken boullin cube (or veggie if you prefer)
In a separate pan, fry garlic in olive oil. Add tomato paste and vinegar. Fry for 2-3 minutes, add to beans, add rest of ingredients to beans. Boil beans until broth is creamy and beans are very soft. Stir frequently.
