Easy Beef Enchiladas

Introduction

Made according to recipe on side of Old El Paso enchilada sauce can. Made according to recipe on side of Old El Paso enchilada sauce can.
Number of Servings: 12

Ingredients

    1 lb. ground beef, lean
    2 cans (10 1/4 - ounce) Old El Paso Enchilada sauce
    1 1/2 c. Taco Blend Cheese
    Corn Tortillas, 12 6-inch variety
    1/4 c. chopped onion
    1/4 c. chopped bell pepper

Directions


Preheat oven to 375 F. Lightly grease a 13 x 9-inch glass baking dish.

Brown ground beef, onion, and bell pepper until beef is browned. Drain. Add 3/4 c. enchilada sauce and 1 c. taco cheese. Fill corn tortillas with beef mixture and place seam sides down. Pour remaining enchilada sauce and last 1/2 cup of cheese on top of enchiladas. Bake for 15 to 20 minutes or until heated.

Makes 12 enchiladas. Serve with a salad to get more vegetables!

You can always substitute ground turkey to lessen the calorie punch of ground beef. Enjoy.
