Mashed Potato Casserole

Introduction

Not the healthiest thing created, but its cut back from the original full version. My husband does deserve to eat some things he really enjoys, so I make this for a treat every now and then to keep him pacified :) Not the healthiest thing created, but its cut back from the original full version. My husband does deserve to eat some things he really enjoys, so I make this for a treat every now and then to keep him pacified :)
Number of Servings: 6

Ingredients

    4 medium potatoes, baked and mashed
    1/2 cup low fat cream cheese
    1/2 cup low fat sour cream
    1/2 cup low fat shredded cheddar cheese
    1/4 cup onion, chopped
    2 garlic cloves, minced
    salt and pepper, to taste

Directions

Spread potatoes in an ungreased 13x9 inch baking pan. In bowl, combine remaining ingredients. Spread over mashed potatoes. Cover with foil; Bake at 350 degrees for about 40 minutes. Serves 4.
