Quick Tuna Curry

Ingredients

    1 apple, chopped
    1/2 onion, chopped
    2 tsp oil
    2 tsp curry powder (to taste)
    1 Tbs flour
    1 cup skim milk
    coconut essence
    1 tsp Splenda (optional)
    185g can tuna in spring water, drained and flaked

Directions

Put the oil into a non stick pan, add curry powder, apple and onion. Cook, stirring until onion is softened.
Add flour, stir well and cook 1 min,
Add milk, stirring all the time until sauce has boiled and thickened.
Stir in cocvonut essence and Splenda to taste
Stir in tuna and cook gently until heated through,
Serve over cauliflower
