These are good post run, cardio, and great for breakfast or as a snack through the day..

Ingredients

1 box of Fiber One Banana Muffin Mix
3/4 cup of water
1/2 cup of egg whites
1/4 cup of unsweetened applesauce
4 scoops of protein powder - Lean Dessert Cinnamon Roll or flavor of choice
Directions
Makes 24 mini-muffins.
Take mix, water, egg whites (I use the carton type), applesauce and protein powder. Stir until batter is made. Might be lumpy.
Using ice scream scoop, place a scoop of mix into cupcake paper or aluminum holders. Place those in a well sprayed muffin tin for 12 muffins.
Bake at 400 degrees for 18 min. Unwrap immediately and let cool. Wrap in plastic wrap for quick grab and go snacks and breakfast.
