Easy Taco Soup (1 cup svg)

Ingredients

    2-1/2 lbs lean ground beef, browned and drained
    2 - 14.5 oz cans of "Mexican Fiesta" style diced tomatoes (tomatoes, cilantro, lime)
    2 - 15.5 oz cans "Santa Fe Recipe" style bean blend (pinto and red beans, kernal corn, diced onion)
    1 - 11.5 oz can V8 vegetable juice


Directions

Brown and drain ground beef (ground turkey works well, too). Combine all ingredients in a stock pot and allow to simmer until hot.

Makes 12 cups. Nutritional info based on a 1 cup serving.

Serving ideas (nutritional info not included with recipe): top with grated cheddar cheese, sour cream, or cheese crackers, with tortilla chips or quesadillas.

*This is NOT a salty soup! For additional salty flavor, try adding a packet of taco seasoning to the meat as you brown it.
