HJ Manicotti (2 pcs)

Ingredients

    1 pkg (14 pcs) Manicotti shells
    1 (15 oz) container part skim ricotta cheese
    4 cups shredded mozzarella cheese
    1 large egg
    1 Tbsp oregano
    1 Tbsp basil
    1/2 Tbsp rosemary
    1/2 tsp garlic
    2 1/2 cups spaghetti/marinara sauce
    2 Tbsp parmesan cheese

Directions

Preheat oven to 350.
Boil water in a large pot; add manicotti shells and continue to boil about 7-8 minutes (they should still be firm; they'll finish cooking in the oven).
While shells are cooking, combine ricotta, 3 cups mozzarella, egg, and herbs; blend well. Prepare a baking dish (11x15 works well for 14 shells) by pouring 1 cup of sauce in and spreading to coat the bottom. When shells are done, remove from water and stuff each shell with about 1/4 cup of the cheese mixture. Place in baking dish and pour remaining sauce over stuffed manicotti. Top with remaining mozzarella and sprinkle parmesan cheese over the top. Bake for about 30 minutes, until cheese on top is melted.

Serving size = 2 stuffed manicotti
