Introduction

Quick and easy! Sometimes I sub a veggie sausage pattie for the bacon. Great for breakfast, lunch or dinner with cantaloupe. Quick and easy! Sometimes I sub a veggie sausage pattie for the bacon. Great for breakfast, lunch or dinner with cantaloupe.
Number of Servings: 1

Ingredients

    1 extra large egg, beaten with milk
    1/2 cup skim milk
    1 pat unsalted butter
    1 slice cooked bacon, chopped
    1/4 cup onion
    1 3/4 oz portabella mushrooms, chopped
    1/4 cup 2% cottage cheese, drained


    Dash each nutmeg, salt & white pepper

Directions

Preheat oven 350 degrees.
Beat egg, milk and butter in small bowl.
Stir in all other ingredients.
Pour into a small baking dish sprayed with Pam(I use a Corningware bowl.)
Bake 30 minutes or until set.
let stand for 5 minutes.
