Szechuan Shrimp

Ingredients

1 pound shrimp
2 tbsp canola oil (divided)
1 tbsp minced garlic
1 tbsp minced fresh ginger
2 cup sliced green, red, orange peppers
Sauce
3 tbsp reduced sodium chicken broth
1 tbsp tomato paste
2 tsp balsamic vinegar
1 tsp brown sugar
1 tsp reduced sodium soy sauce
1/2 tsp sesame oil
1/4 tsp cornstarch
1/4 tsp crushed red pepper flakes
Directions
Heat wok or stir fry pan over high heat. Add 1 tbsp of canola oil; add garlic and ginger. Add remaining tbsp of oil and add shrimp. Stir fry until shrimp are just cooked. About 1 minute. Add peppers. Stir fry for about 30 seconds. Add the sauce and cook for approx 1-2 minutes.
Sauce:
whisk sauce ingreients together in a small bowl.
Serve over rice or noodles. Sprinkle with 1 tbsp of sesame seeds
