Introduction

Ingredients

    Egg substitute, liquid (Egg Beaters), 0.50 cup (remove)
    Olive Oil, 2 tbsp (remove)
    Raisins, 0.25 cup, packed (remove)
    Walnuts, 0.25 cup, chopped (remove)
    Baking Powder, 3 tsp (remove)
    Brown Sugar, 0.25 cup, packed (remove)
    Musselman's Home Style Natural Unsweetened Apple Sauce, 1.50 cup (remove)
    Oat Bran, 2 cup (remove)
    Vanilla Extract, 1 tsp (remove)
    Orange Peel, 1 tsp (remove)
    Cinnamon, ground, 1.5 tsp (remove)

Directions

Makes 12 muffins. Bake at 425 for 15 to 17 minutes.

    I made these for years for my DH, who liked them far too much! They were from a cholesterol lowering diet book but did not call for orange peel. - 6/15/09

    These muffins are definitely growing on me. I made them with agave instead of sugar and they worked fine. Next time I'll add some ground flaxseed to increase the fiber. - 8/17/09

    This was awesome! we didn't have raisins or walnuts but we used dried cherries and they were soft, chewy, and sweet. I thought my family wouldn't like the oat bran because they don't like things with wierd texture, but they loved it and we froze the extras to eat later. Thanks for sharing! - 7/23/09
