Oven Fried Spicy Chicken

Ingredients

    8 Chicken breast (or 4 breast and 4 thighs, about 4 ounces each piece)
    1 cup corn flakes, (pulverized)
    12 saltine crackers, (pulverized)
    1 1/2 tsp. chili powder (I used African Bird pepper..it's very hot chili powder)
    salt and pepper
    1 tsp. garlic
    1 cup low-fat plain yogurt
    1 egg white

Directions

Preheat oven to 375.
Spray a pan (cookie sheet) with canola oil cooking spray and set aside.
Add corn flakes and saltines to a food processor and take for a spin until it's all crunched into crumbs.
Place in a Ziplock along with the spices. Zip shut and shake so all the contents are mixed well.
In a bowl, add the yogurt and the egg white.
Dredge the chicken through the yogurt blend, shake off excess, then plop into the Ziplock with the dry ingredients. You can add 3-4 pieces of chicken, zip it shut and shake until all pieces are coated.
Place chicken on the sheet. Repeat until all chicken is coated. Spray the chicken with the cooking spray then place in the oven.
Cook for about 45-50 minutes.

*You can eat this as a main dish or make spicy chicken sandwiches. Either way is a hit
