Turkey thighs carbonnade (slow cooker)

Number of Servings: 6

Ingredients

    2 turkey thighs about 2 lbs, skin and excess fat removed (recipe calculated for 38 oz)
    salt and pepper
    1/2 t thyme
    1 bay leaf
    2 med onions, chopped
    2 garlic cloves, chopped
    2 c chicken broth
    2 T dijon mustard
    2 T brown sugar
    1 lb carrots, peeled and sliced into 1 inch pieces

Directions

Oil inside of crock of a 3 quart slow cooker. Put carrots on bottom. Brown turkey thighs in nonstick pan. Sprinkle with thyme and add bay leaf. Add onion to skillet and cook until golden. Add garlic, broth, mustard, sugar and bring to a boil. Transfer turkey to crock with tongs and pour in liquid. Turn to low and cook 6-8 hours until meat is tender.

The turkey cooks down to 21 ounces of cooked turkey meat, which yields six 3.5 ounce portions and about 1/2 to 2/3 c liquid per serving.

Could probably omit sugar.

  • We enjoyed this dish. I started with 1 cup of broth and it boiled away. Then I added another cup and it was almost gone when I turned it off. The carrots ended up as sweet as candy. I only used 1 T of brown sugar. I also did not use salt and pepper. Yum! - 3/25/13
