Ingredients

4 medium sized eggs
3/4 cup 2% milk
1/4 tablespoon honey-mustard
1/4 teaspoon salt & pepper
5 cups cubed, Dried Healthy Choice Hearty 100% whole grain bread OR 5 dried slices cut--up
1 cup of shredded Cheddar cheese
1/2 cup deli ham extra lean 5% fat cut in small pieces
12 cherry tomatoes cut them in half
Directions
Pre-heat oven to 350 F or 180 C
Put 12 muffin-cup liners in muffin pan
In large bowl whisk together eggs, milk, honey-mustard, salt/pepper.
Stir in dried bread cubes, ham & shredded cheese so everything gets coated with the egg mixture.
Spoon the mixture into the muffin pan.
Put 2 tomatoe halves on each muffin.
Bake 25 minutes or insert a knife in the centre if it comes out clean they care cooked.
Let cool, eat & enjoy
Stored in fridge for 2 days or freeze for up to 2 months
Frozen re-heat in micro-wave Med-power 1 to 2 minutes.
