Number of Servings: 4

Ingredients

    5 cups cold water
    1 lb sweet potatoes (2 large) peeled and cubed
    2 red ripe tomatoes peeled and chopped
    1/4 cup lentils (optional)
    1 tsp chopped garlic
    1 tsp cumin
    1 tsp paprika
    1/2 tsp chili flakes (to taste)
    2 tbsp lemon juice
    2 tbsp fresh mint
    1/3 cup coriander or parsley chopped
    1 tsp grated fresh ginger
    1 lb halibut cut in to chunks


Directions

Fill a soup pot with water, add the first 10 ingrediants and bring to a boil, put on lid and simmer for 20 minutes until potatoes soften. Uncover and simmer another 10 minutes.
Add the fish and ginger simmer another 10 minutes or until fish starts to flake. To serve top with fresh chopped coriander on top. Makes 4 good dinner sized portions.
