Ingredients

1 can Trader Joe's Organic black beans
1 Tbsp Extra Virgin Olive Oil, any brand
1 c frozen corn kernels (I used Happy Farms from Aldi)
1 c chopped green peppers
1 c chopped red peppers
1/2 c chopped vidalia onion (1/2 onion yielded one half cup for me- it depends on size)
1 1/2 tsp red pepper
1/2 Tbsp black pepper (I used Organic)
Directions
1- In large skillet, heat olive oil over low- to med heat; Add onions, red and green peppers to skillet; saute for 3-5 minutes
2- Rinse and drain black beans; add to pepper mix; Add frozen corn to mix as well
3- Increase heat to med high or high for 5 minutes; in the meantime, add both black and red peppers; stir
4- Allow to simmer in skillet over med to low heat for 5-10 minutes; remove and serves 4 a 3/4 c serving
