Ingredients

Take 1 Cup of Low fat (1%) cottage Cheese
1 - 2 Cans of Drained and rinsed Garbanzo Beans
1 C. shredded carrots
Bell Peppers Finely Slice & chop all peppers to bit size pieces
1 C Red,
1/2 C Green &
1/2 C Yellow
2 Tbs Red onion Diced
2 Tbs Green onion Chopped
1 C. Seeded and thinly sliced cucumber
1 Clove Garlic (minced)
2 Tbs Chopped Parsley
Salt & Pepper to Taste.
Directions
Take (1%) cottage Cheese; place it into a cheesecloth-covered strainer so most of the additional liquid is drained out.
In a large bowl place 1 - 2 Cans of Drained and rinsed Garbanzo Beans, shredded carrots, Finely Slice & chop all peppers to bit size pieces. Dice & chop both red & green onion. Cut cucumber in 1/2 length wise, seed and thinly slice. Add garlic (1 clove minced), and chopped parsley. Mix well.
Add drained Cottage Cheese, and sunflower seeds. Add Salt & Pepper to taste.
I figure this would make at lest 6 1/2 C. Servings.
