Introduction

Yummy salad, made for lunch and served with a boiled egg and a tablespoon of hummus on toast. Nutrition list uses some alternatives from recipe listing (ie: dressing amounts estimated, should be made to taste AND salad made of organic mustard leaves and spinach, but couldn't find them in listings.) Ingredients

    Halloumi (50g)
    Salad Greens, Organic Mustard and Spinach (125g)
    Apples, sliced (50g)
    Carrots, chopped or shredded. (125g)
    Salad Dressing made to taste with Lemon Juice, Olive Oil and Dijon Mustard


Directions

Makes 4, lunch-perfect servings.
Simply toss ingredients together and feel free to add anything you like to taste. I enjoyed this with a boiled egg, and a slice of wholemeal toast with hummous.
