Ingredients

    1 can Italian style tomatoes - drained
    1 6.5 oz can mushrooms - drained
    1 lb low fat ham - diced
    2 whole eggs
    10 egg whites
    1 C shredded part skim mozzarella cheese

Directions

Preheat oven to 350 degrees. Lightly spray a cast iron skillet with cooking spray.

Combine all ingredients and bake for 45 minutes or until center no longer jiggles.

Serve with whole grain bread and all 4 major food groups are covered.
