I usually make this with boneless, skinless, chicken breasts and thighs. An old recipe I got from a friends mother that makes it's own gravy! Ingredients

1/4 cup flour
1 tsp salt
1/2 tsp paprika
1 frying chicken
1 box/envelope chicken noodle soup mis (Mris. Grass preferably)
1 med onion, sliced
1 cup evaporated milk (can use low fat)
2 tsp dried parsley
1/2 tsp poultry seasoning
1 cup water
vegatable or olive oil for frying
Directions
Mix flour, salt and paprika together. Coat chicken in flour mixture and fry until half cooked. Remove chicken and drain drippings, then stir in soup mix, water, onion, return chicken to pan, cover and cook on med heat for 30 to 35 min.
In sauce pan, mix milk, parsley and seasonings, cook until thickened but do not boil. Place chicken in cassarole and pour both mixtures over chicken. Serve. Makes 8 servings
