Tigerlily's Lean Un-Layered Lasagne

Introduction

Makes a nice variation from the layered kind...this one is uber lean because I use ground chicken breast and low fat cheeses. The way I see it...if you are good all day, you can indulge in a double dose of this meal :o)

Ingredients

    Ingredients:
    6 Pasta, Lasagna Noodles, 6 oz
    2 cups Hunts Original Style Traditional Spaghetti Sauce
    1 small onion, chopped
    1 teaspoon garlic [or one clove chopped]
    8 ounces ground chicken breast
    1 large egg
    1 cup Cottage Cheese, 1% Milkfat, 1 cup (not packed)
    1/2 cup Kraft Shredded 2% Mexican Four Cheese blend, divided in half
    ground pepper and dried basil to taste



Directions

Preheat oven to 350 degrees

1. Cook the lasagne noodles per package directions, then set aside.

2. Spray a medium saute pan. Cook the onion, garlic, and chicken breast over medium/low heat [you don't want it to brown] until there is no pink left in the chicken and the onions are translucent.

3. In a small bowl, mix the cottage cheese, egg, half the shredded cheese, some ground pepper and about a teaspoon of dried basil in a bowl.

4. Take one cup of the chicken/onion/garlic mixture and add it to the cheese mixture then combine thoroughly.

5. Add the 2 cups of pasta sauce to the remaining chicken/onion/garlic mixture in the saute pan for 5 to 10 minutes, or til heated through.

6. Pour 1 cup of the pasta sauce into a 9"x9" baking dish.

7. On a clean cutting board, take a drained noodle where it's pointing vertically [up and down, not across]. Take 1/3 of a cup of the cheese/chicken mixture and roll the noodle up. **THIS IS A RATHER SLIMEY PROCESS!** Take a spatula, lift the rolled up noodle, and place face down on the sauce in the baking dish. Repeat with the remaining noodles and cheese/chicken mixture.

8. Pour the remaining pasta sauce over each roll up. Cover with foil and bake for 35 minutes.

9. Uncover the baking dish and sprinkle the remaining shredded cheese over the top of each roll up. Bake until melted.

Each roll up is one serving, recipe yields six servings.
