Pan Fried Yellow Squash

Introduction

Quick & delicious...any leftovers can be added to an omelette the next morning! Quick & delicious...any leftovers can be added to an omelette the next morning!

Ingredients

    6 large yellow summer squash, sliced
    1 medium onion, large dice
    3 cloves garlic, minced
    1 teaspoon salt
    1 teaspoon black pepper

Directions

Melt bacon grease in a large skillet. Add layers of squash, onions, garlic & salt & pepper-about 3 layers, depending on size of pan. Cover & cook on medium heat untilnsquash is tender about 20 minutes. Serve
Makes 6 servings as a side dish.
