Banana Bran muffins

Introduction

Breakfast on the go, or an anytime snack. 3g of fiber per muffin, and the recipe can be easily modified if desired (use 1/3 to 1/2 cup of sugar if you can't find agave, and the flour can be all white flour if you'd prefer). Semi-sweet chocolate chips are good as well, but not necessary! Ingredients

    1/2 Cup rolled oats
    1/2 cup All-Bran cereal
    1 cup milk (2% used in calculations), divided
    3/4 cup all purpose flour
    1/2 cup whole wheat flour
    1 Tablespoon baking powder
    1/2 teaspoon salt
    1 teaspoon cinnamon, or to taste
    1/2 cup unsweetened applesauce
    1 egg
    2 bananas, peeled and chopped into small pieces
    1 cup chopped walnuts, dividied

Directions

Preheat oven to 400 degrees. Spray muffin pan (12 cup pan) with non-stick spray.
Combine 1/2 cup of the milk with the All Bran cereal and rolled oats. Sit aside. Combine both flours, baking powder, salt, and cinnamon in medium bowl. In small bowl, combine remaining milk, applesauce and egg. Make a well in the dry ingredients, add wet ingredients to them. Add the oats/All Bran mixture on top (cereal should be mushy at this point) and mix until just combined. Add banana and 1/2 cup of the walnuts, stir until mixed. Divide batter between cups in the pan, sprinkle with the remaining walnuts. Bake 20 minutes, or until a toothpick comes out clean when inserted into the center of a muffin. Makes 12 muffins, 1 serving each.
