Red Roaster Chicken

Introduction

I like a little bite without too heavy a kick. Mission accomplished. I like a little bite without too heavy a kick. Mission accomplished.
Number of Servings: 10

Ingredients

    1 roasting chicken (4-5 pound), giblets removed
    1/2 tsp. garlic salt
    dash cayenne
    1/2 tsp. paprika
    1 tsp. black pepper
    1 tsp onion powder
    1 Tbsp. extra virgin olive oil

Directions

Place chicken, breast side up, in baking pan (on a rack is great but not mandatory). Add some water to bottom of pan. Sprinkle spices over chicken and drizzle olive oil on top. Cover with foil and bake at 350˚F for 2 hours. (My oven currently won't go higher than 350. You're welcome to adjust as needed)
A 4 1/2 to 5 lb. bird makes about 10 servings for us.
