Italian Divorce

Introduction

I love Italian Wedding soup, but I'm slowly trying to eat less meat. Here, lentils are used in place of the meatballs. Leftovers taste great, too! Number of Servings: 8

Ingredients

    3 c dried lentils (about a lb bag)
    1 can chicken broth, low sodium
    2 pkg frozen spinach
    1 c chopped carrots
    1 c chopped celery
    .25 c chopped onion (I use pre-chopped frozen onion, if so, add with other frozen veggies)
    1 c frozen corn
    1 Tbsp garlic powder
    1 Tbsp oregano
    1 Tbsp basil
    1 Bay leaf (if you have it)
    Salt and pepper to taste

    A nice substitute for the various Italian seasonings is Thai seasoning (I found it at Wegmans)

Directions

Makes 10 generous servings

1. In a dutch oven, bring lentils, broth, bay leaf, all frozen veggies, and 4 c water to a boil.

2. Simmer until frozen veggies are defrosted. (about 10 min)

3. Add raw vegetables, simmer 10 more minutes.

4. Add oregano, basil, salt, and pepper.

5. Add any ingredients you forgot!
