Introduction

This is very easy and very tasty. It can be frozen in individual containers or as sandwiches in English Muffin or half a Pita. Remember to add calories for these items not included in the recipe. This is very easy and very tasty. It can be frozen in individual containers or as sandwiches in English Muffin or half a Pita. Remember to add calories for these items not included in the recipe.
Number of Servings: 8

Ingredients

    6 large eggs
    1 can cheddar cheese soup
    1/3 # sausage
    1/4 C chopped green pepper
    1/4 C chopped onion
    1 C shredded 2% milk cheddar cheese

Directions

Whip together eggs and soup. Mix in shredded cheese. Set aside. In large skillet, brown sausage with chopped veggies. Stir until cooked through. Add egg mixture. Continue to stir occasionally until eggs are cooked and any liquid evaporated.

Divide into 8 individual serving containers or make into sandwiches with English Muffins or pita halves. Wrap individual sandwiches and place in freezer bag. Freeze. To serve place one frozen serving in microwave and reheat for 60-90 seconds.

Makes 8 servings.
