100 Calorie Whole Wheat Blueberry Muffins

Introduction

Low cal and very healthy and YUMMY! Low cal and very healthy and YUMMY!
Number of Servings: 12

Ingredients

    1 cup flour
    1c oats(old fashioned)
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1/2 cup sugar free applesauce
    2 egg whites
    1/2 cup brown sugar
    1/2 cup water
    1c blueberries, frozen

Directions

Mix dry ingredients together, than add wet ingredients except for blueberries. Mix well, than add blueberries. Bake at 350 for 20-25 minutes or until tops are golden brown. It is a little hard to tell since they have wheat flour in them but you will notice a little difference. Makes 12 muffins

    I changed the recipe a little bit. I used fresh blueberries, 1/2 C whole wheat flour, 1/2 C All Purpose flour, 1/4 C brown sugar with 1/4 C Splenda. My family loves the muffins. Next time, I'll add more applesauce and sugar, cut back on oatmeal, since I like to add more moisture and sweetness.=) - 5/20/10

    These muffins are pretty tasty! I added some sliced almonds and they were delicious. They are chewy and filling and an excellent pairing with a cup of coffee. I had them for a snack and I will enjoy them again for breakfast. - 7/14/09

    Good, but these aren't whole wheat! They need to be made with whole wheat flour, not all purpose flour to be call whole wheat. I have a wheat grinder, grind my flour to a fine pastry flour and then substitute the all purpose with the real thing - 6/30/10

    I've made these twice - the second time I used steel cut oats for a more nutty flavor. Excellent & such a great treat when I want something sweet and healthy. - 9/27/09

    Tonight I tried the fresh blueberries and added 2 scoops of vanilla isopure protein so that I was able to eat while also getting more protein. They were great! - 9/12/09

    My husband votes 4 stars but I say 5 since it has both awesome flavor AND healthy ingredients. Will definitely make these again! Only thing I changed was that I used fresh berries instead. Hearty and filling. Thanks for sharing! - 7/31/09

    Excellent. Came out very well indeed. Nice, soft and moist. Would like it to rise more to get bigger muffins, but perhaps if I leave the dough to rise some more that will happen next time. - 7/1/10

    honestly, i'd probably give it a 5 if i hadn't messed it up somewhere. smells delicious! i think i put too many blueberries in. it stuck to the paper and didn't have much "muffin" part. i'm going to try it again - because with these ingredients it has to be good! - 2/17/10

  • loved them! i didn't have any apple sauce so just used canola oil BUT next time will definitely use the applesauce. also, added 1 TBSP ground flax seed. I was looking for a nice simple blue berry recipe with wheat flour and oatmeal. This was perfect! - 7/1/12

  • A little bland with whole wheat flour, and a bit dry, but good for a diet muffin. I think I'll try a little more moisture the next time. Would probably be good with most any fresh fruit. Will definitely make again. - 6/23/12

  • This is an awesome recipe! I added 1/3 cup chopped walnuts to the dry ingredients, and sprinkled some oats and raw sugar on the tops just before baking for visual appeal, and they were perfect! I used Reynolds foil muffin liners sprayed with Pam and didn't have any issues with sticking whatsoever. - 10/23/10

  • My family and I loved these muffins! The first day they did stick to the liner, but on the second day once completely cooled, the liner comes off just fine. I used whole wheat flour and fresh berries & will make them again for sure. My son has eaten 5 or 6 already. So much for my freezer stash - 8/4/10

  • Very good! We used fresh blueberries because we had them & they pop in your mouth when you bite into them. We did use whole wheat flour & it gives it a nice nutty flavor. Also added some flaxseed. Next time I will spray the liners because they do stick. Definitely curbed my muffin craving! - 7/10/10
