100 Calorie Whole Wheat Blueberry Muffins

Ingredients

1 cup flour
1c oats(old fashioned)
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup sugar free applesauce
2 egg whites
1/2 cup brown sugar
1/2 cup water
1c blueberries, frozen
Directions
Mix dry ingredients together, than add wet ingredients except for blueberries. Mix well, than add blueberries. Bake at 350 for 20-25 minutes or until tops are golden brown. It is a little hard to tell since they have wheat flour in them but you will notice a little difference. Makes 12 muffins

I changed the recipe a little bit. I used fresh blueberries, 1/2 C whole wheat flour, 1/2 C All Purpose flour, 1/4 C brown sugar with 1/4 C Splenda. My family loves the muffins. Next time, I'll add more applesauce and sugar, cut back on oatmeal, since I like to add more moisture and sweetness.=) - 5/20/10

This is an awesome recipe! I added 1/3 cup chopped walnuts to the dry ingredients, and sprinkled some oats and raw sugar on the tops just before baking for visual appeal, and they were perfect! I used Reynolds foil muffin liners sprayed with Pam and didn't have any issues with sticking whatsoever. - 10/23/10

My family and I loved these muffins! The first day they did stick to the liner, but on the second day once completely cooled, the liner comes off just fine. I used whole wheat flour and fresh berries & will make them again for sure. My son has eaten 5 or 6 already. So much for my freezer stash - 8/4/10

Very good! We used fresh blueberries because we had them & they pop in your mouth when you bite into them. We did use whole wheat flour & it gives it a nice nutty flavor. Also added some flaxseed. Next time I will spray the liners because they do stick. Definitely curbed my muffin craving! - 7/10/10
