Black Bean Soup

Number of Servings: 6

Ingredients

    1 can black beans, drained & rinsed
    1 can diced tomatoes, with juice
    2 c frozen corn kernels, thawed
    2 cups Chicken Broth
    1/2 c. instant brown rice
    1 t. garlic powder
    1/2 t. cumin
    1 t. Morton's Hot Salt (or less, for less spicy)
    Juice of 1 lime
    Chopped cilantro

Directions

Add ingredients through broth to medium saucepan. Bring to a boil. Add brown rice and simmer approx. 20 minutes. Add seasonings and adjust for taste. Remove from heat and add the juice of a lime and the cilantro.

Makes 5-6 two cup servings. Great to accompany a salad or sandwich for lunch.

NOTE added 6/17/09: Went out at lunch to run errands - temp is 90+. Came back & took a sip of this soup straight from the fridge and discovered that it is absolutely delicious & refreshing served cold!!!
