Chickpeas and Sauted Veggies

Introduction

Awesome vegetarian dinner! Leftovers for lunch heat up just great. Awesome vegetarian dinner! Leftovers for lunch heat up just great.
Number of Servings: 4

Ingredients

    1 can chickpeas, rinsed and drained
    2 T canola oil, separated
    4 c chopped sweet onions
    4 c sliced baby bella mushrooms
    1 c shredded parmesan cheese
    Salt and pepper to taste

Directions

Place rinsed and drained chickpeas in 8x11 casserole dish and set aside.

Saute onions in 1 T oil until caramelized. Layer on top of chickpeas.

Saute mushrooms in same pan with an additional 1 T of oil until browned. Layer on top of onions. Salt and pepper to taste.

Sprinkle cheese over veggies and bake in 350F oven for 20 minutes or until cheese is melted.
