Corn & Black Bean Salsa/Salad

Ingredients

    1 green pepper, diced
    1 red pepper, diced
    1 yellow pepper, diced
    1/2 C red onion
    1 can corn - 15.2 oz.
    1 can Bush's black beans 15 oz.
    1/4 C olive oil
    1 tsp. dried cilantro
    4 TBSP red wine vinegar
    1 tsp. lime juice
    1 clove garlic

Directions

Drain beans and rinse. Drain corn. Combine with diced peppers and onion. Combine olive oil, red wine vinegar, lime juice, garlic and cilantro. Toss with vegetables.

Makes approximately 10 1/2 cup servings.
