Veggie, cheddar, corn bake

Ingredients

    1 medium onion, chopped
    1 garlic clove, minced
    5 TBSP. butter, divided
    2 cups sliced fresh mushroomos
    1 medium sweet red pepper, chopped
    1/2 tsp. salt
    1/4 tsp. pepper
    1 pkg (16 oz.) frozen corn thawed
    2 cups shredded cheddar cheese
    2 tsp. brown sugar
    1/2 cup dry bread crumbs

Directions

In a large skillet, saute onion and garlic in 2 TBSP. butter until tender. Add the mushrooms, red pepper, salt, and pepper; cook and stir for 5 minutes, or until vegetables are tender. Drain

In a greased 2 qt. baking dish, layer half of the corn, mushroom mixture, cheese, and brown sugar; repeat layers. Melt t he remaining butter; toss with bread crumbs. Sprinkle over casserole. Bake, uncovered, at 375 for 25-30 minues or until golden brown. Yield: 4-6 servings. Calories based on 6 servings.
