6oz Barrilla Plus Angel hair pasta
1c Fat free chicken stock
1 1/2T peanut butter
1/2c Soy Sauce
1 clove garlic, minced
1t ginger root, minced
1c shelled, hot edamame
1container of firm tofu, diced into cubes
1t oilive oil
1c fresh asparagus, cut into 1/2 in pieces
2t sesame oil
Cook pasta according to box directions. In the last 2 minutes of cooking, add the asparagus and edemame. Drain.
While the pasta cooks, heat 1t olive oil in a nonstick sautee pan. Sautee cubes of tofu until crip on the outside, hot on the inside.
Combine the cooked noodles, edamame, asparagus and sauce in bowl. Toss to combine well. Add in the tofu and serve. Can be served hot or cold.
Makes 6 1cup servings.
