Peach Ice Cream

Introduction

I'm taking a 4th of July menu from Allrecipes and trying to lighten it up. The original of this recipe had 221 calories and almost 14 g. of fat per serving. I haven't made this yet, so I don't know if it will work using the fat free half and half and egg substitute. I am thinking about using part half and half and part light french vanilla creamer. I was also thinking about trying it using a sugar substitute.

Number of Servings: 32

Ingredients

    egg substitute to six eggs (or six eggs, pasteurized if available)
    3 cups sugar
    10 fresh peaches, pitted and chopped
    6 cups fat free half and half (or 4 cups half and half and 2 cups light French vanilla coffee creamer)
    2 t vanilla extract
    3/4 t salt

Directions

In large bowl, mix together egg substitute and sugar until smooth. Puree peaches in blender. Stir five cups of puree into egg mixture. Stir in half and half (and creamer if using), vanilla and salt. Mix well.
Pour mixture into freezer canister of ice cream maker and freeze according to manufacturer's instructions. Serves 32.

  • I made this today, with one substitution, I put one cup of heavy cream in for one of the cups of FF half and half. I wanted to make sure it wasn't icy, or granular. It came out perfect. The flavor is delicious, fresh, wonderful. Thanks for lightening it up, and I highly recommend it! - 9/4/09
