Carrot Cake II with Cream Cheese Frosting

Introduction

Number of Servings: 15

Ingredients

    Cake

    2 eggs
    2 egg whites
    3/4 1 tsp stevia powdered extract
    1/3 cup dark brown sugar (or sucanat)
    1/3 cup unsweetened applesauce
    1/3 cup olive oil
    1 cup raisins
    2 cups whole wheat flour
    2 tsp ground cinnamon
    2 tsp baking powder
    4 cups grated carrot

    Cream Cheese Frosting

    8 oz of low fat cream cheese
    2 tbsp soy milk or skim milk
    1 1/2 tbsp lemon juice
    1/2 tsp stevia powdered extract
    1 tbsp honey

Directions

Preheat oven to 350 degrees. Spray a 9x13" pan with non-stick spray.
Beat eggs & whites. Add sugar, stevia, oil, applesauce. carrots and raisins. Mix well. Add remaining ingredients. Mix well. Pour into pan. Bake for 30 minutes. Lower heat to 325 degrees. Bake for another 20-25 minutes.
Top with Cheese Frosting (Stevia)recipe follows...

Cream Cheese Frosting
Combine all ingredients in a bowl. Whip until creamy. Spread on cooled cake.
