3/4 cup enriched corn meal
1 1/4 cup all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup 1% milk
1 egg, beaten
1/4 cup canola oil
Blend all dry ingredients. Stir in remaining ingredients until dry ingredients are moist.
Pour batter into ungreased cast iron skillet and bake for 20 to 25 minutes or until a wooden toothpick inserted into the center comes out clean.
Makes about 6 servings.
For best flavor and texture serve warm.
