Introduction

This is a great way to slip some unseen vegetables into the meatloaf. I put the carrots and onions thru the food processor. The veg. also help keep the meatloaf moist. To reduce to sodium use low sodium onion soup mix. This is a great way to slip some unseen vegetables into the meatloaf. I put the carrots and onions thru the food processor. Ingredients

    3 pounds 93% lean ground beef
    1 pound carrots shredded
    1 large onion chopped fine
    1 cup low sodium catsup
    2 eggs
    1/2 c raw rolled oats
    1 pkg dry onion soup mix
    2 TBS chopped garlic

Directions

Mix all ingredients together and form one large loaf or two smaller loaves and bake at 350 about 1 and a half hours
